1 cup rice
2 tablespoons lard or butter
2 green onions, sliced
2 cups water
2 teaspoons chicken bullion
1/2 to 1 teaspoon chile powder
scant 1/4 cup frozen mixed vegetables
Melt lard in pan, add rice and brown. When it starts browning add green onions. When onions are soft add remaining ingredients and bring to a boil. Turn down heat to low, cover and cook 20 minutes.
This is also very good if you make it with cajun seasoning, or try it with stewed tomotoes.
