Southern Potato Salad

Start by making enough mashed potatos to feed however many good folks are comming to supper, make the mashed potatos with milk and butter as usual and mash and stir until creamy. Add 1 tbs of mustard, 1 chopped onion, 2 or 3 hard boiled eggs chopped (whites and yokes) 3 or 4 sweet pickles chopped into small cubes (add a little pickle juice too) and 3tbs of mayo, you may need more or less mayo tasting will tell, that holds true for all of the ingridents, salt and pepper to taste, sprinkle paparika on top for looks, this is extra good after it has been in the fridge overnite and is nice and cold. The important thing for this potato salad is that it be creamy and smooth, no lumps!
