6 Cups Water
1 Lb. Pkg. Large Lima Beans, picked-over and rinsed
1 Large Onion, Peeled and Chopped
1 Ham Hock or 1/2 Lb. Bacon, Chopped
2 Bay Leaves
1 to 2 Tablespoons Everglades Seasoning
1/2 Cup Vinegar
Put all ingredients except vinegar in large pot and bring to boil. Lower heat, cover and simmer, stirring occasionally, for 1 1/2 to 2 hours, until limas are tender. Add more water for thinner broth.
When beans are done, remove and discard bay leaves, add vinegar and stir. Serve over rice and/or with cornbread. Garnish with more chopped onion and vinegar, if desired.
