1 pkg. okra
3 Tablespoons oil
1 medium onion, chopped in wedges
2 large garlic cloves, finely minced
2 medium tomatoes, cut in wedges
2 potatoes peeled & cut in wedges
1/2 tsp cayenne
1 tsp cumin powder
1/2 tsp sugar
1] wash okra, cut off stem & tip. Cut remaining okra into 2 or 3 pieces.
2] In a saucepan, heat oil then fry onion & garlic on low heat.
3] Add the remaining ingredients, stirring gently for 5 mins. (okra will appear sticky this will disappear as it cooks.
4] Cover pan & cook on low heat 20 mins. Stirring occasionally.
5] Dish is ready to serve when the potato is cooked.
