One head of fresh cauliflower
One can of cream of chicken soup
Two tbsp. mayonnaise
One tsp. curry powder
One tbsp. parsley flakes
One cup grated colby cheese
One half cup breadcrumbs
Steam or lightly boil cauliflowerettes after separating them from the head. Drain. In large casserole dish, mix remaining ingredients except breadcrumbs thoroughly. Fold in cauliflower. Sprinkle breadcrumbs on top. Bake for 30 minutes at 350 degrees.
Note: This works well with broccoli or broccoflower too. Makes 6-8 side dish servings.
