Green beans Chinese style

Chinese-style Green Beans

Ingredients

3/4 pound slender green beans
2 tablespoons unsalted butter
1 teaspoon soy sauce
1 teaspoon lemon juice
8 cups water
1 teaspoon salt

Rinse the green beans under cold running water. Drain the beans
well and place them on cutting board. With a sharp knife, trim off
the ends of beans, pulling off any strings. Set the beans aside.
SAUCE: Put the butter in a small saucepan. Set the pan on a burner of your stove and turn the heat on to low. Let the butter melt, then remove the pan from the heat. With a wooden spoon, stir the soy sauce and lemon juice into the melted butter. Set the pan aside.
Put the water and salt in the large saucepan. Set the pan on a burner of your stove and turn the heat on to high. Bring the water to a rapid boil.
Carefully add the beans to the boiling water. Boil the beans until they are tender, about 6 minutes. Don't overcook the beans; they should be
bright green, slightly crunchy.
Pour the beans and water into a colander to drain the beans.
Immediately put the drained beans in a serving bowl and pour sauce over them.
Serve immediately.
