2 c. each chopped lettuce, curly endive, romaine
1 med. onion, thinly sliced
1 1/2 c. cooked peas, drained
1 c. julienne strips Swiss cheese
6 tbsp. mayonnaise
3 tbsp. sugar
Salt and pepper to taste
LAYER.......1/3 of the vegetables, cheese, and mayo into bowl in order given.
SEASON....with 1 tbsp. sugar, salt and pepper.
REPEAT.....layers until all ingredients are used, seasoning each layer.
CHILL.........covered for 2 hours.
TOSS.........just before serving.
GARNISH..with crumbled bacon.
I have never used curly endive or romaine. I usually use whatever is handy--head lettuce, green leaf lettuce, or red leaf lettuce. Try your favorites!
