Grouper Fillets
1 bottle seasoning for blackened fish
Preheat cast iron skillet on an outside grille or stove, as a lot of smoke is created. Heat skillet until one drop of water boils away immediately.
Dip fillets in melted butter and sprinkle seasoning on the side of fish to be placed down in skillet. Place in skillet, and immediately sprinkle other side of fish. Cook approx. one and a half min. each side. The more seasoning you put on, the spicier it is.
