Easter Ham Salad

Posted by: Sally (Convict #1000) on 03/28/97 08:43:18 CST

The reason I called this Easter Ham Salad is just because Easter is a good time to make it since there's usually a ham around at Easter.
Combine
1 cup mayonnaise
1 cup sour cream
Dice
1/2 cup celery
1/2 cup geen onions
Cube
2 cups ham
2 cups swiss cheese
Cook
1 cup Minute Rice (so you'll end up with 2 cups cooked rice)
8 oz. frozen peas
Allow rice to cool
Drain peas and allow to cool
Mix all ingredients together, adding peas last (don't stir peas around too much as they will turn mushy)
Refrigerate overnight

This is a wonderful dish. The only problem I ever have with it is trying to get my hands on a knife here at the Big House to cube the ham and cheese and dice up my vegi's.
