SALTINE CRACKER CAKE

6 egg whites, stiffly beaten
2 cups sugar
1 tsp. vanilla
1 stack saltine crackers (crushed by hand in large pieces)
1 cup chopped pecans

To egg whites, add 1 cup sugar and vanilla. Mix together 1 cup sugar, crackers, and pecans. Fold
in egg white mixture. Grease 13x9 pan. Bake at 350 until starts to turn brown. (Approximately 20
minutes.) Cool completely. Top with large container cool whip. Keep refrigerated. Better if it sits
overnight.
