1 1/4 cups sugar
1 1/4 cups cooked mashed sweet potaters
1 stick butter, room temp.
2 large eggs, room temp.
1 1/2 cups flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 cup milk
1/2 cup chopped raisins
1/4 cup chopped walnuts or pecans
2 Tbsp. sugar
1/4 tsp. cinnamon
Grease 24 muffin cups. Preheat oven to 400.
Beat sugar, sweet potaters, and butter till smooth. Add eggs and blend well.
Sift together flour, baking powder, spices, and salt. Add alternately with milk to sweet potater mixture, stirring just to blend. Do not overmix.
Fold in raisins and nuts. Spoon into muffin cups and sprinkle each with cinnamon/sugar mixture.
Bake 25 to 30 minutes or till muffins test done. Serve warm to your favorite sweet potater.
