Re: Baked Lasagna

1 pound ground beef
1 medium onion, minced
1 clove garlic, chopped
1 tsp. chopped parsley
2 Tbsp. olive oil
2 cans (6 oz. each) tomato paste
(Italian style paste is best)
2 cups water
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. oregano (Secret Ingredient)
8 oz. lasagna noodles
2 eggs
3/4 lb. (12 oz) cottage cheese
3/4 lb. (12 oz) sliced mozzarella cheese

In large heavy pan, brown ground beef in oil with onion, garlic and parsley. Add tomato paste, 2 cups water, salt, pepper, secret ingredient and simmer for 1 hour.

Meanwhile cook lasagna noodles like it says on package. Mix together eggs and cottage cheese. In 9 X 13 pan, spread about 1/2 cup sauce, then alternate layers of lasagna, sauce, egg/cottage cheese mix, and mozzarella till baking pan is filled. Top with sauce and sprinkle with Parmesan cheese, if desired. Bake at 375 for about 30 minutes. Makes 8 servings- about enough for a real small Russian Summit Meeting at Aunt Bea's.

I like cooking lasagna very much. If add some fresh sliced tomato on each layer. This is my own idea.
