Ingredients:

1 lb. butter 
1 cup chopped onions 
1 1/2 potoes peeled and cubed 
chicken broth or( 2 1/2 c. boiling water and 2 chicken
bouilion cubes) 
10 ozs. frozen broccoli thawed 
6 ozs. shredded cheddar cheese ( I use velveta cheese)to my
likeing 
salt & pepper 
Directions:
  1. Melt the butter in a 2- to 3-quart saucepan. Add the onion and saute for 5

  2. minutes. Add the potatoes, water and bouillon cubes. Cover and bring to a

  3. boil; reduce the heat to medium and cook just until the potatoes are

  4. tender, about 15 minutes. Remove 1 cup of potato cubes with a slotted

  5. spoon and set aside. Pour the contents of the saucepan into a blender and

  6. process until smooth. Return to the saucepan. Mix in the reserved potatoes

  7. and the broccoli. Place over medium-low heat and very gradually add the

  8. cheese, stirring until heated through and the cheese is completely melted.

  9. Season with salt and pepper.
