Fruit Pizza

Posted by: Emma on 07/02/98 11:05:30 CDT

Fresh fruit (bananas, strawberries, pineapples, kiwi, etc.) cut as desired.

FILLING

1 - 8 oz. pkg. cream cheese
1 cup confectioners sugar
1 cup Cool Whip
1 roll sugar cookie refrigerator dough

GLAZE

1/2 cup orange juice
1 Tbsp. lemon juice
1/2 cup sugar
1/2 cup water
2 Tbsp. cornstarch

Press cookie dough in bottom of 12 inch pizza pan. Bake at 375 for 10-12 minutes. Cool.

Filling: Beat cream cheese and confectioners sugar until fluffy. Add Cool Whip and spread over cooked cookie crust. Cover with fruit in desired pattern.

Glaze: Combine all ingredients in saucepan and cook until thick. Cool. Then drizzle over fruit and refrigerate.

Tip for bananas: To keep them from turning brown, take 1/2 cup lemon juice and 1 cup water and mix it up. Cut up your bananas and let them set in water and juice for about 10 minutes and drain and put on your pizza.

(This ain't Barney's favorite--mazarelli--but it's a delicious summertime dessert kind of pizza.)
