Preheat Oven to 375 degrees.
Blend:
2 cups Sugar
4 Eggs
2 Tbsp Vegetable Oil
Combine:
2 cups Flour
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Salt
1 16oz Can of Pumpkin
1/4 cup nuts (optional - walnuts or pecans are best)
Blend the above two mixtures together and place in a lightly greased and floured Bundt cake pan.
Frosting Recipe (cake can be served without frosting as well, or with store bought frosting)
Beat the following until thin:
1 cup Cream Cheese
1 stick Margarine
1 tsp Vanilla
To this, add 3 to 4 cups Powdered Sugar (whatever thickness of frosting you prefer)
Frost onto cooled cake and sprinkle lightly with nuts (optional).
