Step 1: Beat 3 eggs on high speed for 5 minutes in large bowl.
Step 2: Combine 1 cup sugar, 2/3 cup pumpkin, 1 tsp. lemon juice in separate bowl.
Step 3: Combine 3/4 cup plain flour, 1/2 tsp. baking soda, 2 tsp. cinnamon, 1 tsp. ginger, 1/2 tsp. nutmeg, 1/2 tsp. salt in separate bowl.
Now mix all ingredients together into one bowl. Add dry ingredients last. Spread onto well greased 15 x 10 x 1 inch pan, cover with chopped pecans. Bake 15 minutes at 375 degrees. Cool. Roll in clean pillowcase that has been sprinkled with sifted powdered sugar and leave it while you prepare the filling.
2 cups powdered sugar
2 (8 oz) packages cream cheese (softened)
8 Tbsp. butter (softened)
1 Tbsp. vanilla
1 Tbsp. lemon juice
Mix together, unroll pumpkin roll and spread with filling. Roll back up, wrap in foil and freeze.
